Al Pastor is one of Mexico’s most popular taco fillings. It is a street food classic originally brought to Mexico by Lebanese immigrants. Pork is marinated and cooked on a vertical spit with pineapple placed on top. As the meat roasts, the pineapple juices drip down and help to tenderise it, adding a sweet tangy finish.
We have recreated that experience with a traditional spice blend featuring cumin, ancho chilli, guajillo chilli, Mexican oregano, achiote from annatto seed, coriander and a dash of vinegar powder to capture the zing of pineapple. The result is a rich, deep orange red rub that brings serious flavour to the grill.
You do not need a rotisserie to enjoy it. Just dust over chicken breasts, steak, kebabs or pork and cook your favourite way. Serve in warm corn tortillas with fresh coriander, pineapple, onion, and top with salsa verde, queso fresco, hot sauce and a squeeze of lime.
