Synonymous with Yakitori and Unagi in Japanese bbq this incredible fuel can be used to cook anything on the grill. The fineness and high quality of Binchotan are attributed to steaming at high temperatures (around 1000 degrees Celsius). Although it is often thought that the binchotan burns hot, in actual fact it burns at a lower temperature than regular lump wood charcoal, but it does burn much longer longer. Which is why it is preferred by a number of highly skilled Japanese chefs and is the favourite for cooks of either Unagi (freshwater eel) or Yakitori (chicken on skewer).
